Baked giant beans   Gegantes plakee

4 servings:

500gr large dry  fava large beans

1 medium onion, chopped

4 cloves garlic, chopped

1 can crashed plum tomatoes 440gr

1 teaspoon sugar

¾ cup olive oil

1 tablespoon chopped flat parsley

Salt and freshly ground pepper

    

 Preparation method  

 

Soak beans overnight in cold water. Rinse and boil until cooked halfway.

Drain and set on the side. In a frying pan pour half of the oil sauté onions and garlic until soft.

Add tomatoes, parsley and sugar

Simmer for 10' minutes. In a 24x36cm Pyrex dish, spread drained beans, pour over the prepared tomato sauce, the remaining olive oil and bake 190c-375f for 35' minutes or until cooked and sauce is reduced to ¼ its quantity.

Above recipe can be prepared with one can of 756ml precooked fava large beans

Rinse with plenty of cold water and spread in Pyrex

Top with the tomato sauce add the olive oil and bake for 15' minutes 190°c.

Serve cold as entrée or add some to a pikilia plate.
