Béchamel sauce

Béchamel sauce for Moussaka or Pastitsio

Ingredients:

 

3 cups hot milk

1 cup all purpose flour

˝ cup butter

3 eggs and one yolk

Salt and white pepper

Ground nutmeg

 

 

Preparation method

Melt butter in a saucepan over medium heat. Add flour and stir until mixture is well blended. Gradually stir in hot milk. Cook over medium heat, stirring constantly, until sauce begins to boil and thickens.

Simmer and stirring frequently, over very low heat for 5 minutes

Remove from the heat, season with salt, pepper and add a little nutmeg. Cool sauce for 5 minutes. In a bowl beat eggs and add into béchamel sauce stirring constantly, until thickens’ and use as much you need for your Pastitsio, or Moussaka
