Fried aubergines

Ingredients:

6 small aubergines

1 arge aubergines                                 

1 cup all purpose flour

1 teaspoon salt

1 large fresh egg

1 tablespoon olive oil              

1 cup water, room temperature

1 cup canola oil

Preparation

Rinse aubergines and cut in to thin slices.  

Large aubergines round slices small ones lengthwise. Season them with salt and let drain in a colander for 30 minutes or more.

Prepare batter in a bowl combine flour salt and water and one tablespoon olive oil, mix well add egg and beat batter with wire whisk, until creamy batter is formed.

Dry aubergines with absorbent paper 

Heat canola oil in a frying pan with heavy bottom When oil reaches very hot point, dip each slice in the batter and drop it into frying pan. Fry both sides until golden brown.

Remove from the frying pan and place them on absorbent paper towel.

Sprinkle fried aubergines with grated Kasseri, or Parmesan cheese.

Serve hot as appetizer

Same way can be prepared Fried Zucchini,

Tip: Fried round aubergines can be gratin also by adding on top of each slice one tablespoon prepared

Tomato sauce, some Parmesan or Greek Kasseri cheese grated and some sprinkles of Greek oregano.

Cover with mozzarella cheese and gratin under the broiler 3-4’minutes Serve as meal with green salad and crusty bread

 

 

 

 

Cook with fresh ingredients and pure Greek olive oil
