Κρεατόσουπα 4 servings:
1200grms
Veal shoulder with bones 3-carrots,
peeled 2-medium
onion cut into 4 wedges 2-celery
sticks coarsely cut 3-zucchini
washed and clean ends 3-medium
potatoes cut into wedges 4-whole
plum tomatoes deseeded 1-hot red pepper, or 1/4-teaspoon chili 3-bay
leaves 8-allspice
seeds ¼-cup
olive oil Salt
and fresh ground pepper 2-liters water |
Preparation method
Rinse meat with cold water. Pre-boil for five minutes and remove scum that surface on top of the pot. Remove pot from the heat discard boiling water. Rinse meat clean of remaining scum. Clean same cooking pot and add the oil, sauté vegetables except potatoes, until wilted. Add meat, 2 litrers water bay leaf salt and boil over moderate heat for 45 minutes. Add potatoes, zucchini and cook for further 20 minutes until all ingredients cooked. Close heat and add some slices of bread fried in butter. Served in deep soup bowls with fresh squeezed lemon Serve meat on side dish with the vegetables and sprinkle with fresh ground pepper for seasoning. The same recipe can be prepared with beef chuck. It may take more time to cook.
