Olives bread

& Sun dry tomatoes

1-cup water

1-teaspoon salt

1-teaspoon sugar

2-tablespoon olive oil

1-tablespoon honey

1 envelope 9 gr. instant yeast

3-cups non-bleached flour

6-8 Sun dried tomatoes chopped

1-tablespoon finely chopped fresh basil

1 onion finely grated

1-cup Kalamata black olives pitted and 

sliced

 

Pre-heat oven 190°c-375°f     

 

 

Preparation method

 

Soak dried tomatoes in water for 2 hours to

swell

Dissolve the yeast in warm water. Sift flour and

make a well and combine oil, sugar,

salt and one cup warm water.

Knead and add the olives, dried tomatoes, basil

and cheese.

Place in an oiled bowl. Brush with olive oil.

Cover and leave to rise until doubled in size.

Form into a round loaf, brush with honey diluted

with little water and bake in a moderate oven for

1hour and until golden brown.
