How
to cook pasta “
al dende”
Usually in boiling salted
water until tender.
Italians call this "al
dende", tender but not completely cooked.
Allow lots of water, about
4 liters per 500gr pasta.
Pasta should move around
into a large pot with heavy bottom in order to cook evenly.
Do not add oil to the
water.
Oil coats the pasta, which
eventually challenges the sauce that tries to penetrate and coat the pasta.
The minute the pasta is
cooked, drain it. Rinse only if it's important to cool down the pasta or to
remove extra starch, for pasta salads.
Immediately toss it with
some kind of sauce, salad dressing, butter, olive oil anything to keep the
pasta from sticking together.
Use the appropriate sauce
and recipe and serve, cold or hot. |
