Skordalia garlic potato

Ingredients:  

 

 1 kg potatoes

10 garlic cloves, cleaned and minced

¼-cup red wine vinegar

1-cup of olive oil

Salt and fresh ground pepper

 

 

Skordalia is ideal with fried salted dry codfish and lightly boiled or steamed rapinni.

 

 

 

    Preparation

 Boil the potatoes and mash them while they

are still hot. 

Mince garlic very fine and add it in to mashed

potatoes along with the vinegar, salt pepper

 and keep mixing it. Add olive oil in a

thin stream and mix to a smooth texture.

Using steal bread instead of potatoes can make 

skordalia also, soak it in water, squeeze out the water

and follow same mixing procedure.

Cover tightly, refrigerate for 2-3 hours and 

serve.
