Ingredients:

2-cups thick yogurt or sour cream or both

1-cucumber                                 

3-cloves garlic, finely minced

2-tablespoons olive oil

1-tablespoon finely chopped fresh dill

1-tablespoon fresh squeezed lemon juice

Salt and fresh ground white pepper.

 

 

Preparation:

If yogurt used, drain in a cheesecloth-lined in a sieve over bowl.

Drain several hours or overnight in the refrigerator.

Peel cucumber clean seeds grate and squeeze liquid.

In a bowl mix all ingredients cool and refrigerate for 2-3 hrs.

Red radishes and black olives for garnish

Served as a dip with crispy veggies or slices of crusty or pita bread

 

Cooking with fresh herbs enhances the flavours of food without adding fat or salt

For best cooking use fresh ingredients and Greek virgin olive oil
