green zucchini, grated 1 large
potato, grated ½-cup
semolina
2-tablespoons
cornstarch 2 large
fresh eggs ½-cup
crumbled feta cheese 1-medium
onion, fine grated
1-teaspoon
fresh basil fine chopped
1-tablespoon
flat parsley chopped 1-cup
canola oil for frying 2-ablespoons
grated Parmesan cheese Sea salt
and fresh ground pepper

Preparation method Grate zucchini and potato and squeeze out some of their
liquid. In a bowl combine the first nine ingredients, salt and
pepper. Stir with wooden spoon. Fry patties in hot oil, cook until patties are golden
browned, both sides, or until cooked Drain on absorbent paper towel and crumble some feta cheese
on the fritters. Serve with Tzatziki dip or spicy tomato sauce adding few drops of Tabasco sauce.
